White Bean Salad with Seared Tuna

Serves 4

 

Ingredients:

2 can cannelini beans

¼ cup red onion, finely chopped

¼ celery, finely minced

1 small head, about 4 cups broccoli rabe, roughly chopped

¼ cup parmesan cheese

¼ cup olive oil

¼ cup red wine

1 teaspoon red pepper flakes (optional)

2-8 oz. Grade One tuna steaks, approximately 1 inch thick each

Salt and pepper to taste

½ cup Basil Pesto Basil Pesto

Ingredients:

2 ¼ cups fresh basil leaves

1/4 cup grated Parmesan cheese

1/4 cup extra virgin olive oil

¼ cup pine nuts

2 garlic cloves, finely minced

 

Instructions:

1. Place all ingredients in a food processor and pulse until completely combined. Adjust measurements to taste.

2. In a large sauté pan, heat half of the olive oil. Sauté’ broccoli rabe in the pan until cooked down. Add red pepper flakes and red wine and allow the alcohol to cook off. Set aside off the heat.

3. Empty beans into a colander and rinse well. Shake off excess water and place in a large mixing bowl.

4. Add to mixing bowl, red onion, celery, basil pesto, parmesan cheese, and broccoli rabe. Salt and pepper to taste. Allow to chill in refrigerator.

5. In a large sauté pan, heat remaining olive oil, season tuna on both sides with salt and pepper. When oil is heated, carefully place tuna into pan. Sear tuna on one side 1-2 minutes. Flip tuna and cook additional 1-2 minutes on other side. Remove from pan.

6. Allow tuna to rest on a sanitized cutting board for 2-3 minutes. Slice tuna on a diagonal bias.

7. Plate salad in individual plates and add tuna on top.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

Privately Contracted Events, Gastronomic Tours & Events at Sapore are Non-Refundable

LIABILITY

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
