Scaloppine Piccata with Artichokes
Description Scaloppine Piccata with Artichokes
Serves 8

Ingredients:

4 fresh artichokes trimmed & cut into wedges or 8 ounces frozen artichokes 2 Tbs. unsalted butter
2 Tbs. extra virgin olive oil
3 pounds scaloppini (pork, chicken, veal or turkey)
1 tsp. Sea salt
1/2 tsp. white pepper
1 cup chopped onion
1 red pepper trimmed and julienne
1 Tbs. capers
2-3 sprigs fresh flat leaf Italian parsley
2-3 fresh thyme sprigs
1/2 cup demi-glace or chicken stock
1 cup heavy cream
3 Tbs. all purpose flour
1 Tbs. artichoke liquor

Blanch the artichokes in boiling water and lemon juice until soft 20 minutes. In a large casserole melt butter and olive oil. Season the scaloppini with fresh herbs and pepper, dust with flour. Add the prepared scaloppini to the casserole and brown well on both sides. Transfer the cook scaloppini to a plate and repeat the process until all the scaloppini are cooked adding more butter and oil as needed. Add the onions, peppers and artichokes and cook over low heat, stirring occasionally until translucent. Stir in the herbs: parsley, thyme and capers. Add the cooked scaloppini with any accumulated juices. Season with salt and pepper. Add demi-glace and liquor bring to a simmer. Reduce heat to low and simmer until the scaloppini are tender. Transfer the scaloppini to a dish and keep warm. Reduce the liquid. Add the cream and bring to a boil. Simmer over low heat until it thickens about 15 minutes. Spoon sauce over the scaloppini and serve.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
