Rosemary Grilled Chicken Panini with Peppers & Mozzarella

Serves 8

 

4 chicken breasts, boneless & skinless

8 ciabatta bread rolls

16 slices fresh Mozzarella cheese

2 roasted red peppers, sliced

8 Tbsp. extra virgin olive oil

4 Tbsp. balsamic vinegar

2 tsp. fresh rosemary, chopped

1 clove garlic, minced

1/2 tsp. sea salt

1/2 tsp. black pepper

 

Preheat grill for medium-high heat.

 

Whisk together the olive oil, vinegar, garlic and rosemary, season vinaigrette with salt and pepper to taste. Brush chicken with the vinaigrette.

 

Place chicken on the grill and cook for 10 minutes per side or until juices run clear and chicken in so longer pink. Remove from grill, allow to rest for 10 minutes, and cut chicken into slices.

 

Cut the ciabatta rolls in half, brush with pesto and grill for a few minutes until lightly brown. Add on each panini, pepper slices, mozzarella cheese and sliced chicken breasts. Drizzle each panini with remaining pesto and place on the grill or panini grill. Cook panini for 5 minutes per side or until cheese melts. Remove from heat and serve.

 

 

 

                            

Pesto

 

2 large cloves of garlic

25 basil leaves

1/4 cup grated Parmesan cheese

1/2 cup olive oil

Salt and freshly ground pepper

 

In a food processor fitted with the knife blade, drop the garlic through the feed tube to mince.  Add the basil leaves and the Parmesan cheese and pulse to finely mince.  With the machine on, add the olive oil, bit by bit, to achieve a paste-like consistency. Season to taste with salt and pepper.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
