Grilled Tilapia with Cheese Pesto and Risotto Cakes
Description

Ingredients

1 Tbsp. chopped fresh Italian parsley
1 tsp. fresh thyme
1 Tbsp. chopped fresh basil
1 lemon, juice & zest
1 Tbsp. Dijon mustard
1 tsp. Sea salt
1/2 tsp. ground black pepper
2 lb. Tilapia fillets
8 Prosciutto slices
Basket cheese pesto

Instructions

To prepare the tilapia: In a small bowl, combine mustard, lemon juice, thyme, parsley, basil, salt and pepper. Brush mixture all over both sides of tilapia fillets. Wrap fillets in prosciutto and transfer tilapia to a large shallow baking pan. Cover with plastic wrap and refrigerate 30 minutes, or up to 4 hours. Preheat the grill.

Place tilapia fillets on the grill and cook 5 minutes per side, or until fork tender and cooked through. When ready to serve, remove to plate. Serve over tomato risotto cakes and top with pesto.

Basket Cheese Pesto
1 cup packet Italian parsley
1 cup extra virgin olive oil
1/2 cup Basket cheese
1/4 tsp. salt
1 tsp. lemon zest
2 tsp. lemon juice
2 cloves garlic

In food processor, combine all ingredients and process.

Risotto Cakes
Makes 24 Silver Dollar Cakes

1 cup Arborio rice
2 1/2 cups water or broth
2 eggs, lightly beaten
2 cups milk
1 Tbsp. melted butter
2 cups flour
1/4 cup finely chopped tomatoes
2 tsp. salt

Place the rice in a small saucepan with the water or broth. Simmer over medium heat for 30 minutes or until all the liquid has been absorbed and the rice is cooked. Set aside. and let cool.

In a separate bowl, sift together the flour and salt. Whisk the flour mixture into the egg mixture. Add the cooked rice and stir until fully incorporated.

Place a nonstick sauté pan or griddle over medium heat for 3 minutes to condition (heat) the pan. cook the pancakes for 2 minutes on each side or until golden-brown and cooked through. Remove from the pan and blot on paper towels.

CANCELLATION/REFUND POLICY

At LPSC, Inc. we know life happens. If you are unable to attend a class for any reason just let us know and we will refund your class tuition minus the non-refundable registration fee.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
