Ricotta Low-Carbs Cheesecake
Description Ricotta Low-Carbs Cheesecake
Serves 16

1 cup Macadamia Nuts
1 Tablespoon Splenda
16 ounces cream cheese softened
16 ounces old fashioned, whole milk ricotta cheese, well-drained
16 ounces. Mascarpone cheese
1 cup splenda
1 Tablespoon cornstarch
2 teaspoon vanilla extract or 1 scraped vanilla bean
1 orange zest only
1 teaspoon orange Triple Sec
4 large eggs
1/4 cup heavy whipping cream
pinch of salt

Topping: Sour Cream, Splenda and Berries 

1. Combine the cream cheese, ricotta, mascarpone and splenda. Beat slowly until combined. Blend in the cornstarch, vanilla, salt Triple Sec and orange zest .
2. Blend in the eggs one at a time and scrape mixer very well. Blend in the heavy cream.
3. In the meantime prepare the crust by working the nuts with splenda in the food processor until fine. Cover a well greased cheesecake pan with parchment paper, line with nuts mixture and bake at 350 in for 10 minutes. Remove from the oven and cool.
4. Poor cheese mixture in the prepared pan. Line the outside of the pan with two layers of aluminum foil and bake in a water bath for approximately 60 minutes, or until cheesecake is set and starting to puff up. Let cool in water bath for 45 minutes.
5. Chill the cheesecakes in the refrigerator. Serve with Sour cream and fresh berries.

Each class has a percentage of its class fee dedicated to set costs associated with the class which we call the non-refundable registration fee. All class tuition fees include a 25% non-refundable registration fee. Non-refundable registration fees will never exceed $200.00.

The registration fee is non-refundable except for the following situations:
In the event of insufficient enrollment a class may be rescheduled or cancelled. We typically make this decision five (5) days in advance of the scheduled class. We will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

In case of inclement weather, or other circumstances beyond our control, a class may be rescheduled or cancelled without prior notice. Again, we will make every effort to notify you in advance through the contact information you provided and provide you a full refund including the registration fee.

The LPSC will not be held liable for any loss, injury or damage to students or their property, due to any act, neglect or omission by the school, its agents or employees. The LPSC reserves the right under unavoidable circumstances or adverse weather conditions to alter the timing or content of any course and to substitute any teacher at any time.
